Growing up on a cattle ranch, and now raising my own family with similar roots. As a ranch family, beef has always been at our table. Over the years, I’ve learned how to turn beef into balances, high protein, meals for my family. Healthy beef recipes for families can be so easy!  My husband grew up on a ranch as well, so naturally, we eat a lot of beef throughout the week.

Beef sometimes gets a bad reputation due to claims linking it to heart disease. However, current research is beginning to challenge the long-standing belief that saturated fats, like those found in red meat, are the main culprits in heart disease. Personally, I believe the most important thing we can do is focus on eating a balanced diet of wholesome foods rather than demonizing a single ingredient. I’ve confidently fed my family beef while being mindful of macronutrients (protein, carbohydrates, and fats).

How We Balance Macros with Beef

A few years ago, my husband Jared decided to dial in his health. He worked with a personal trainer and followed a nutrition program that emphasized balanced macronutrients. I watched as he gained muscle, increased his energy, and improved his overall mood and outlook on life.

Nutrition has always interested me, I have a degree in animal nutrition, and I was intrigued by the positive changes I saw in Jared. I recently read Forever Strong by Dr. Gabrielle Lyon, which emphasizes the importance of protein and muscle as we age. It reinforced my desire to prioritize protein and strength training so I can feel good and be healthy for my kids.

Providing wholesome food for my family has always been a top priority. I truly believe that all foods can contribute to a healthy, balanced lifestyle. Yes, I love a good sweet treat now and then. No, I don’t believe carbs are bad, or that you should only eat meat or only eat plants. What I do believe in is balance—and for me, that means making sure I get enough protein, carbs, and fats throughout the day.

I’m not a dietitian, and I have so much respect for those who are. I’m simply sharing what has worked for me in feeding my family nourishing meals with beef, all while being mindful of macros. Healthy beef dinners for families can easily fit into a macro conscious diet. 

Healthy Beef Recipes for Families

Steak with Potatoes and Broccoli (High Protein & Balanced)

We love all cuts of steak—ribeye, T-bone, New York strip—but when we want to be more mindful of fat intake, we go for sirloin.

Why sirloin?
Sirloin steaks are cut from the sirloin primal, located just in front of the round and behind the loin. They’re more tender than round cuts but leaner than ribeyes, making them a great everyday option.

How I cook it:

  • Sear the steak in butter or oil in a cast iron skillet for a few minutes on each side.
  • Season with salt, pepper, garlic, rosemary, and thyme.
  • Transfer to a preheated (425 degrees Fahrenheit) oven and cook until it reaches 5°F below your desired doneness.
  • Let it rest for 5 minutes before serving.

Sides:

  • Baked Potatoes: Poke holes in potatoes and bake at 350°F directly on the oven rack for 45–50 minutes.
  • Broccoli: Steam fresh broccoli in a steaming basket over boiling water for 5–7 minutes.

Easy Ground Beef Tacos (Kid-Friendly)

Ground beef is a staple in our house, and it is something that is so versatile. We have young kids so having something that I can incorporate into several recipes is important, and it is a cut that easily fits into healthy beef recipes for families. 

How I make it:

  1. Brown 1 lb ground beef in a skillet, crumbling with a Chop & Stir or spatula.
  2. Add seasonings: salt, pepper, garlic powder, onion powder, chili powder, cumin, paprika, and crushed red pepper flakes.
  3. While the beef cooks, prep toppings: chopped lettuce, grape tomatoes, olives, avocados, and shredded cheddar cheese.
  4. Serve in flour tortillas—or sub in corn or sourdough discard tortillas. (Read more about my sourdough journey HERE) 

High Protein Chickpea Pasta with Beef Meatballs

This is my high-protein version of comfort food. Chickpea pasta doesn’t taste exactly like regular pasta, but it’s a great alternative when you want to up your protein.

Ingredients (Serves 4):

  • 1 lb ground beef
  • 1 large egg
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp pepper
  • 8 oz chickpea pasta
  • 2 cups marinara sauce (I like Rao’s Homemade)

Instructions:

  1. Preheat oven to 375°F.
  2. In a bowl, combine ground beef, egg, Italian seasoning, salt, and pepper. Mix gently—don’t overmix.
  3. Roll into 1–2 tablespoon-sized meatballs and place on a parchment-lined baking sheet.
  4. Bake for 35–40 minutes or until internal temp reaches 165°F.
  5. While meatballs bake, boil chickpea pasta according to package directions (I add sea salt to the water).
  6. Drain pasta, then combine with meatballs and marinara sauce.

Simple Hamburger Patties with Rice and Veggies

This is one of our easiest go-to meals and a great way to keep dinner simple. When I first started bringing Jared around to meet my family he thought we were crazy for eating just a hamburger patty. It turns out this is own of Jared’s favorite ways to eat ground beef now.

How I make it:

  1. Form 1 lb of ground beef into four patties.
  2. Season with salt and pepper and/or other preferred seasonings and cook on the grill or stovetop until the internal temperature reaches 165°F.
  3. Serve with cooked white rice and steamed green beans.

Pro Tip: You can top the patties with sautéed onions, mushrooms, or a fried egg for extra flavor and protein from the egg.

Classic Beef Roast with Mashed Potatoes and Carrots 

A Sunday favorite at our house.

How I make it:

  1. Preheat oven to 300°F.
  2. Season a 3–4 lb chuck roast with salt, pepper, garlic powder, and onion powder.
  3. Sear roast in a hot Dutch oven with oil until browned on all sides.
  4. Add 1 cup beef broth, cover with lid, and roast in the oven for 3–4 hours or until tender.
  5. In the last hour, add peeled carrots and finish cooking until fork-tender.

Sides:

  • Mashed Potatoes: Boil peeled potatoes, mash with butter and milk, and season to taste.
